A month ago or so I had a guest give me a recipe for a wine cake. I made it and thought it was good, but you know me and I like to modify recipes I get. I started to wonder if rum instead of wine would be good. Of course that would start to fall into my buddy Steve’s specialty, so I need something else.
That is when the idea of a mojito cake came to me. It is a rum cake with cake mix, pudding, eggs, oil, and rum. On top of this I made a glaze with lime juice, pulverized mint leaves, and powder sugar.
I served it tonight and let me tell you it was good. In fact one of my guest was shoveling it in so fast she had glaze in her hair. 🙂
