So I found another addition to the Guiding Light menu.
This one combines shrimp (or crab meat), pineapple, cucumber, celery, and green onion. I mixed this with a citrus dressing containing OJ, lemon juice, balsamic vinegar, olive oil, basil, mustard, garlic, and pepper. I mixed it all together and placed it in lettuce cups and vola….yummyness.
These were the perfect cool, refreshing light dinner.
