In a few days I will be publishing the January newsletter and a new feature I started last month is a “Recipe of the Month” and this month it is going to be an amazing spinach soup I made last week. My guest liked it so much they told me this had to be the “Recipe of the Month”.
I cooked onion, potato, and spinach in coconut milk and broth and then blended it smooth. the hot sauce and pepper on top are a great contrast in color and flavor.
