I may never buy pickles from the store again and here is why

As many of you know, I enjoy cooking. In fact, I also like to watch some of the many cooking shows out there. Chopped is a favorite and so is Good Eats by Alton Brown. What I really like about Good Eats is how Alton Brown gives you the science behind the cooking. Well I was watching some reruns I have on the boat and when I watched the episode on pickles I decided to give it a whirl.

Holy smokes was it easy to do and the pickles turned out yummy on my first attempt. The basic concept is to boil a cup each of water, sugar, and apple cider vinegar until the sugar is all dissolved. After that you add spices as you see fit. It takes about 15 minutes and the pickles are ready within 12 hours.

Mustard seeds seem to be used all the time, but I don’t have any right now so I used plain mustard, haha. The first time I added curry and a chili lime spice and this time I used chipotle poweder. Of course, dill is always good and so is the basic Italian spices. To be honest, I think you could try almost any spice and see how it works.

As far as what to pickle, you can pickle almost anything hard enough to handle being submerged in liquid and so far I have done cucumbers, carrots, and broccoli. I want to try hard boiled eggs next.

It has been so fun experimenting and the results are so tasty. I can’t wait to try even more combinations and I would love to hear if you give it a whirl. Bon Appetite.
