I had a recipe for lemon bars that I got out of a dessert recipe book I really like. The had a good lemon flavor, but the gelatin you make seems a little too dense and never quite set right to me. Two years latter I find a recipe for lemony layered cheesecake in an advertisement for a brand of champagne. This recipe was a little to close to my wonderful key lime mousse pie I make, but I like the idea presented.
So I combined the two recipes and came up with a “Lemon Layered Cheesy Mousse”. I use cream cheese, whipping cream, and sweetened condensed milk to make the mousse and layer it with graham crackers. I topped my first one with coco powder, but I think raspberries or another fruit will be better.
