French Onion Soup

Last week sometime, Melek surprised me as I was cooking us dinner by doing a Facebook live video (follow me so you can catch all the action). I was cooking my French Onion Soup, so I told all my followers what I was doing and what was in it. Although I did not come up with this recipe, but I think it is the best French Onion Soup I have ever had and I said as much on the live video. For me it is the white wine that really puts it over the top. Well several viewers liked it, but Kathy specifically asked me to post the recipe, so here it is:

FRENCH ONION SOUP

  • 3 Tbsp butter
  • 5 Large onions (sliced thin)
  • 1 Tbsp garlic (finely chopped)
  • 1 tsp sugar
  • 1 tsp thyme
  • 2 Tbsp flour
  • .5 Cup white wine
  • 8 Cups beef broth
  • 1 loaf French bread
  • 12 oz Swiss cheese (grated)

-Saute onions with the butter in a large stock pot until they soften and start to brown.

-Add garlic, sugar, and thyme while continuing to cook until onions brown (20 minutes or so).

-Stir in flour and then wine and broth.

-Let simmer for 20 minutes.

-Slice bread into thick pieces and toast in oven.

-Ladle soup onto piece of bread and sprinkle grated cheese on top.
