This was my latest experiment.
It is a double layer carrot cake with mango juice added to the batter. There is homemade cream cheese frosting between the layers plus on top of the cake. The final touch is a mango sauce made by reducing some leftover mango juice I used in the cake and drizzling it over the frosting.
The carrot and mango flavors work very well together and the frosting brings it all together. Charter a week aboard so you can try this latest creation.
